That being said, some of the players are incredibly athletically gifted. The guys on the O-Line? Not so much, most of the time. You can still tell when you have a bad offensive line, but that's where it turns into big guys going through the motions.

Oh probably. I've seen some videos of those guys sprinting and it's pretty crazy watching a 300 pound guy move that fast. There's still some who are incredibly nonathletic and just strong though.

Rugby is a harder game and the run on side is 15 men and they play for 80-100% of the game. Each player knows how to attack, defend, kick, etc. The players who specialize in scrumming also have an important role in line-outs, rucks and mauls. The kicking player (and generally the whole backline and some forwards can kick) also have to run and tackle.
Play also doesn't stop after every tackle. The ball stays live so it can be stolen at any time - that's why it's necessary for teams to be able to attack/counter-attack and DEFEND. They have to be super quick and agile too, so they can't wear any padding what-so-ever meaning they sustain huge injuries but injuries are par for the course. 14 other men are relying on you so you keep playing.

In what way? Positions are a lot more specialised than most sports, as well as there being a lot more to learn tactically. From what I've read you're using Union as the comparison, but American Football evolved from League. A lot of people might consider kicking into touch at every given opportunity as patheticAmerican Football separated itself from Rugby even further when the forward pass was legalised in 1906, revolutionising the sport. Again, some people may consider only being able to pass backwards and having 15 men on the field all at once as a primitive concept in a sport stuck in its ways.

Not every Rugby player is 'super quick and agile'; in fact, I'd say people who fit such a description are in the minority, especially in Union. I'm not really a fan of either code of Rugby, but I see where League fans are coming from when they rip into Union for being a game of kicking into touch for field position, peppered with athletically inept players who possess poor ball skills. This is just a generalisation though, of course.
American Football was about to be outlawed in 1905 due to 19 deaths occurring over the course of the season. This then led to many rule changes, as well as the introduction of equipment, which evolved over the years to what you see today. The roles don't change slightly. There are many formations, sub packages and units that can be out on the field at any specific time. It's a game of matchups. I don't even know where to start with the 'same plays over and over' statement. In my opinion American Football is the most mentally challenging sport in the world. I can't think of any other sport where the playbook is on average 800 pages long.
