So there you have John Cleese etc. to name a handful of on-screen comedians that are just so beyond AdamSandler-ism it's not even a discussion. Then you could also count say... Trey Parker (South Park) as a comedian, so you have the comedy mind of him: All of South Park, South Park the Movie, Team America...

Think of the greatest comedy minds of all-time. Think of Larry David, think of Curb Your Enthusiasm - you think Sandler is a greater comedy mind and creates more credible, funnier comedy than Larry David?... (again, just to name one of many greats). Sandler isn't a great.

On Topic: I believe it has a lot to do with how controversial he was in the past. I'm not saying he isn't controversial anymore but I think "Hollywood" may have found it a bad idea to put a star there for him during his MMLP days. I'm sure he will get one eventually (not that it matters anyway). There are a lot of legends out here on the walk, and he is definitely up in the greatest.
