DJ Premier, obviously. If only for Illmatic and Gang Starr alone.
Eminem - His beats stand-out as the most distinctive to me. "The Way I Am" - "Lose Yourself" - "Cleanin' Out My Closet" these just sound like classic melodies that jam themselves in your head. But they also feel rich and textured.
OutKast - I know they work with a production team on each album but always oversee (as far as I know?) the production of their stuff. And also self-produce. Not sure how much is self-produced but 'OutKast brand' beats if I could use that term, are class. Feel very energized and fresh. And crisp.
Alchemist is also a very good producer. Other than that... I don't know any really lol.

5. Dr Dre - Yeah he fell off, but their was a time when anything Dre touched turned to gold, The Chronic, Doggystyle. and 2001 are just amazingly produced, add other albums he done like N.W.A's albums and the D.O.C's debut, he's easily in my top 5!
