I would check out The College Dropout first. I don't think there's any weak track in that album while in Late there's 1 or 2 I'm unsure about. Most people will probably recommend you this. It's hard to not like this album or at least most of the tracks, especially because of the production.

I think the way he built upon himself with his first three is like how Em did. Each a progression conceptually and artistically. Expands his sound and ideas.

I think Graduation is his best. I think him and Em made two of the most flawless hip-hop albums ever with Graduation and The Eminem Show. People will just take longer to mention them as they're 'recent' n people seem to think there needs to be a 10-20 year gap lmao.

Graduation is to me on of the best hip-hop albums ever period. Of course along with The Eminem Show.
