I do think that all his first three are classics in their own right. For some reason I remember Late Registration material the least though. But when I look back on it, it's top to bottom stellar as well. As for him not being considered one of the greatest in terms of his rapping ability... I think that could change as he gets better. Judging from the preview of some of his next album, he appears to be climbing ever-still on the lyrical scale.
I also consider him a better lyricist (and a great one) in fact than many people's favourite rappers too anyway. I think his rapping is actually very overlooked. Because he puts a lot of emotion into what he says and makes the music itself so powerful but he really did develop and is still developing into a great lyricist. And was always better than people like... 50 Cent. Much better.
What's also impressive is the fact he's now on his 5th album and still doesn't appear to have peaked. Some may say he has already but people say that with everybody at different point. Point is, he's still trying to push boundries and still evidently improving in front of our eyes. I can't wait for Good Ass Job. Also, as you say - Him as an artist. That's what I feel is most impressive about him.
Not nearly enough musicians live up to the title of artist. I think he's one of the few that do and more. He encompasses every element; the visual, concept, theme, music, lyrics... he's a true visionary even if up his own ass to some people. I have bipolar anyway and think he has it. When he goes on this self-appraising rants or does these insane thinks I think what you're witnessing is mania. It's exactly what I do as well. Each idea starts to build on the next and you become self-delusional, start to think your ideas trump everybody else's in the World (literally) and it goes to different degrees, some manic-depressives start to think they're god etc. Kanye clearly exhibits this type of delusional grandiosity and is known for it. But I also think that's what makes him a genius in his art too.

Rakim kindda invented the internal rhymes more than 20 years ago and Kanye is still old fashioned when it comes to rhyme schemes.
