i'm a meat clerk, so........
if its in may, then it'll be nice out enough to grill (charcoal preferably, always, but gas will do too). i would do filet mignon a.k.a tenderloin. u can buy a whole one which weighs like 3 pounds or so or just get enough steaks for each person. if u get a whole one, then get enough for 1/2 a pound (8 ounces) per person. that's the general serving size but most guys can eat more, so change it accordingly. the best way to eat it is like medium to medium-rare. u don't want it done or well-done. a lot of people like to wrap bacon around the steaks...fuckin good as shit. when, or if, u do buy it make sure u pick out or tell the meat guy to get a firm one. that's what makes it tender. u want the sinew and most of the fat removed. the sinew is hard to chew and the fat just ruins it. u want enough to make sure its moist, but not too much to the point where they're just chewing on fat. i would have the steaks about an inch to an inch and a half thick so that they cook to that perfect tenderness. u can marinade it if u want, but it really doesn't need it cuz its so tender by itself. if u want the people to be more involved then u could have them bring some side dishes, or do them yourself. can't help u with any of those, just thought i'd suggest this. trust me, if u cook this right the panties will drop for u. maybe even try it out a couple times for yourself b4 the big day. it really isn't that hard to do. depending on the grill and whatnot, i'd say like 5-7 minutes on each side. AND LIKE ANY MEAT, ALWAYS LET IT REST FOR ABOUT 5 MINUTES AFTER TAKING IT OFF THE GRILL (OR OUT OF THE OVEN) SO THAT WHEN U CUT INTO IT THE JUICES (FLAVORNESS) DOESN'T LEAVE THE MEAT. u want all that juice in there....thats where the flavor is at
